Biang Biang Noodles are perhaps Xi’an’s most renowned noodle variety, deriving their name from the distinctive sound produced when the noodles are stretched and slapped against a surface to flatten them. At authentic Biang Biang Noodles eateries, a single noodle can span up to 5 centimeters in width and 1 meter in length. These noodles are traditionally accompanied by a spicy sauce and assorted toppings. Additionally, it’s customary to enjoy garlic and noodle soup alongside the noodles in the local style.

Xi’an Hot Oil Noodles, also known as “Youpo Chemian,” derive their name from the key preparation step. Once the noodles are boiled, they are topped with chopped green onions, pepper powder, and chili powder before the cook pours hot oil over these seasonings. Their spinach noodles, shaped like sticks, are vibrant in color and have a smooth yet firm texture. Topped with various ingredients, the pure, natural green color of the spinach noodles is complemented by the aroma of pepper, making it incredibly appetizing. You can also add a portion of minced meat on top, which makes the dish even more delightful!

7. Dehai Beef Noodle Restaurant – 德海牛肉面

One of the legendary four authentic Lanzhou noodle shops in Xi’an!

Their beef noodle soup is a must-try, with a delicious broth filled with plenty of chili peppers. Although it looks bright red, it’s not overly spicy. The chewy and refreshing noodles soak up the flavorful broth, making it incredibly appetizing.

Thinly sliced beef shank soaked in red oil, is perfect with the noodles. After finishing the noodles, lift the bowl and blow away the red oil and spring onions from the edge of the bowl. Take a few sips of the soup while the red oil hasn’t floated back yet—it’s so satisfying!

8. Laoli Noodle Restaurant – 老黎面馆

The shop opens only in the afternoon and is a typical hole-in-the-wall in the western part of the city. Every evening, it’s packed with people coming to eat noodles!

The noodles are hand-rolled and then cut into neat strips, laid out on a cutting board ready to be cooked. What’s great about this place is that to ensure freshness, they only cook a fixed number of bowls at a time.

They only sell one type of noodles, which is tomato fried sauce noodles. The noodles are chewy and smooth, and the sauce is flavorful without being oily. It’s so delicious that you’ll finish it in no time!

9. Liuji’s Braised Pork with Hand-pulled Noodles Restaurant – 刘记腊汁肉揪面片

Liuji’s Braised Pork with Hand-pulled Noodles Restaurant is a well-established old brand with a great reputation in Xi’an.

The dish originated in 1998 when the small shop was still inconspicuous. Later, the owner came up with the idea of introducing a combination of braised pork and hand-pulled noodles to enrich the menu. This new dish became very popular.

The braised pork in the shop is made by stewing pork with various spices for over ten hours until it is tender and fragrant. The meat is rich in flavor and tender without being greasy. The hand-pulled noodle pieces are soft and smooth.

The noodles are topped with braised pork, along with leeks and dried tofu. It looks simple but is savory and delicious, with a rich texture.

10. Kunkun Spinach Noodle Restaurant – 坤坤菠菜面

At Xiang Qun Restaurant, you can deeply experience the simplicity of Guangzhou’s culinary culture, where the focus is on hearty and affordable meals. The affordability here doesn’t necessarily refer to low prices but rather to the generous portions of the dishes. While the dishes at Xiang Qun may not be overly fancy, their unique home-cooked flavors have won the hearts of many locals.

One of their must-try signature dishes is the Chicken with Ginger Scallion Oil. It’s almost always ordered by every table. The dish features chicken topped with hot peanut oil infused with fragrant ginger and scallions. When served, the aroma is enticing, with the chicken being firm and plump, and the skin crispy while the meat is tender, perfectly complementing the flavors of the ginger scallion oil.

Another popular dish is the Stir-Fried Goose Intestine with Black Bean, a dish that is a favorite among diners. The goose intestines are stir-fried with black beans, resulting in a rich goose oil flavor and a crispy texture. Guanzhong Laowan has many branches and is known for its robust noodles, reflecting the character of Northwestern cuisine. In addition to the noodles, everything from the store’s decor to the bowls used for serving is in the traditional Shaanxi style, with brick walls, wooden tables and benches.

Some of the most flavorful dishes are the “three-in-one noodles” and “hot oil pulled noodles.” The ingredients and seasonings for the Three-in-One are quite comprehensive! It’s numbingly spicy and aromatic!

The side dishes of braised meats at Guanzhong Laowan are also worth recommending, including braised pig’s feet, pig’s ears, and braised beef, among others. It is said that no MSG or chicken essence is added during the braising process.

12. Chengcheng Hand-ripped Noodle Restaurant – 澄城手撕面

The most magical thing about hand-ripped noodles is that they don’t require a knife or a rolling pin to make. The chef takes a lump of dough and pulls out a noodle that is wide, narrow, thin, or thick, just like hand-pulled noodles, each noodle being about a meter long, which is quite magical.

Because the noodles are torn and pulled during the making process, they are called hand-pulled noodles. Nowadays, there are not many people who can master this skill.

Hand-pulled noodles are more elastic, smooth, and chewy, and the cooked noodles are slightly translucent.

Their taste is similar to other hand-pulled noodle restaurants. They can be made into oil-splashed noodles or mixed with meat and vegetables. These noodles, though they appear soft, are actually chewy and elastic, with a rich flavor of sauce and the fragrance of chili.

13. Kongshi Heyan Noodle Restaurant – 孔氏河沿面片

It’s a bowl of lamb noodles that many old foodies love. Heyan Noodles originated from Linxia, Gansu Province. It was originally a snack sold along the river, strictly speaking, it is Gansu-style lamb stew noodles. The lamb is sliced rather than chunky, distinguishing it from the lamb noodles in northern Shaanxi. Kong’s Heyan Noodles was also the first store in Xi’an.

The noodles are served with wood ear mushrooms, tomatoes, and vermicelli. The noodles are smooth and chewy, and the soup is fragrant without being greasy. The freshly stir-fried lamb slices are placed on top, very delicious.

Their hand-pulled lamb is also excellent. The meat, brought from Lanzhou, is cooked without being refrigerated. The meat is tender and not gamey or greasy. It’s a rare treat to enjoy a few pieces of hand-pulled lamb while eating the noodles.

14. Huxian County Dipping Noodles – 户县摆汤面

Huxian County Dipping Noodles, a traditional delicacy and one of Shaanxi’s top ten famous noodles, is renowned for its hot and sour soup. When served, it includes two bowls: one with clear soup noodles and another with sauce soup. The essence of this kind of noodles lies in the sauce soup, made from sour broth and ingredients like wood ear mushrooms, diced tofu, tomatoes, garlic sprouts, leeks, scallions, and sauce meat.

To enjoy these noodles, pick up a strand with chopsticks, dip it into the sauce soup, and coat it thoroughly. The noodles deliver a burst of sourness followed by their smooth texture. Be cautious as the oil layer on top retains heat, making the soup very hot.

15. Laoyanjia Homemade Spinach Noodle Restaurant – 老闫家手工绿菜面

Laoyanjia Handmade Spinach Noodles has always had a great reputation and is considered one of the top three spinach noodle restaurants in Xi’an. Many people come specifically to Yan’s for a bowl of spinach noodles.

This restaurant offers good value for money. The spinach noodles have a moderate but flavorful taste, a beautiful color, and a satisfying chewiness. They are served with diced potatoes, diced carrots, and minced meat sauce, with a spicy kick. The noodles are mixed in a thick soup, which has maintained its original taste over the years.

16. Liu’er Yongxiang Lamb Noodle Restaurant – 刘二永香羊肉面

When it comes to delicious lamb noodles in Xi’an, Liu’er Yongxiang Lamb Noodles Restaurant on Jianshe Road is definitely among the best. This restaurant has been open for 24 years, from the 1990s to the present. Its small storefront is unassuming, with only seven or eight tables, making it a bit cramped.

The taste of their lamb noodles is exceptional. According to the owner, they use about 12kg of castrated goat meat, which has no gamey flavor. The lamb in the noodles is tender, the soup is flavorful, and the hand-pulled noodles are thick and chewy.

On the table, there are iron plates containing cilantro, onions, red oil chili, and other condiments, which can be added according to personal preference.

17. Glasses Zhang’s Beef Chunk Noodle Restaurant – 眼镜张牛肉块扯面

Glasses Zhang’s Beef Chunk Noodle Restaurant has been open on Jianguo Road for over twenty years, and most of the customers are regulars. Despite all these years, it remains a popular small noodle restaurant in Shaanxi, reminiscent of the taste of old Xi’an.

Glasses Zhang’s noodles have two main characteristics: they are wide and slightly hard, and they are generous with the amount of beef. The noodles are divided into evenly sized chunks after being kneaded, and they are only pulled into noodles when customers arrive, so the wait for noodles here is generally longer.

The noodles have a chewy texture and a strong wheat flavor. The most important part of a bowl of noodles is, of course, the flavor of the sauce. The beef at Glasses Zhang’s is marinated starting the day before, and the ingredients are their own secret recipe, so the flavor is very rich, and the beef is stewed until very tender.

The classic Three-in-One Pulled Noodles (beef + hot oil + tomato and egg) features sweet and sour tomatoes and eggs, fragrant hot oil with moderate spiciness, rich and tender beef, all wrapped in chewy noodles, making it a delicious dish!

18. Wang Ju Noodle Restaurant – 王菊面馆

Wang Ju Noodle Restaurant started as a takeout business and can be said to be the undisputed number one in the Xi’an takeout scene!

Their signature beef noodles are the most classic and delicious. The essence lies in the ingredients; the beef is cooked perfectly, and when paired with their secret hot oil, it’s incredibly appetizing! These noodles are of the firmer variety, so they have a good chewiness to them.

The dark gravy and beef, along with various braised vegetables, are constantly stirred together, coloring the noodles with the red chili peppers. Stir several times until the sauce at the bottom of the bowl is absorbed, only then it’s considered well mixed.

The chopped pepper noodles are also worth recommending. The sauce is made with sliced meat, chopped pepper sauce, and vegetables such as cabbage, potatoes, tofu, and daylily, giving it a strong, savory, and moderately spicy flavor.

19. Lingling Noodle Restaurant – 玲玲面馆

Lingling Noodle Restaurant is a genuine old store in Xi’an, having been open for a whopping 28 years. Many out-of-town tourists come specifically for it. The house is very small, with one dining area and one kitchen, but it is neat and tidy.

There is no menu, only biangbiang noodles, with two types of toppings: “Five-in-One” and “Two-in-One.” The “Two-in-One” includes only hot oil and a secret sauce, while the “Five-in-One” adds meat sauce, soup base, and vegetarian sauce as toppings.

In a stainless steel basin larger than your face, you’ll find chewy and soft noodles at the base, topped with mildly spicy chili oil, sweet and sour meat sauce, and Old Li’s secret sauce, creating a bowl of biangbiang noodles with a unique Xi’an flavor.

20. Lane Shenmian – 巷子深面

In Xi’an, there are countless old noodle houses, but this one is often regarded as the best halal noodle house by many. It only opens for four hours a day, closing at 3 p.m. Their menu consists of only two types of noodles: chicken noodles and beef noodles.

When it comes to their most traditional noodle dish, it’s their signature chicken noodle. After mixing, the white noodles are covered in soup. The toppings include diced potatoes, celery, and pickled cabbage. The chicken is wrapped in noodles, and the pickled cabbage is fried with their own homemade vinegar.

As for the beef noodle, it features large chunks of beef with a variety of vegetables such as diced celery, potatoes, mushrooms, and carrots. The beef is braised to perfection, with just the right amount of sauce, making it rich in flavor despite appearing to have little broth.

21. Junliang Pork Rib Noodle Restaurant – 军良排骨面

Junliang BBQ in the northern outskirts of Xi’an is widely known, but its most famous dish is not barbecue, but a bowl of spicy pork rib noodles.

By combining Shaanxi noodles with pork ribs and hotpot broth, they have innovatively created spicy and flavorful Junliang pork rib noodles. The noodles are super spicy; after a few bites, the numbing sensation kicks in, making your whole mouth tremble. The noodles are chewy and firm. Each bowl comes with two large pieces of pork ribs.

Their barbecue dishes like grilled meat, grilled loin, and grilled tendons are also very good.

22. Che Jia Xiang Gang Zi Kudai Noodles – 车家巷杠子裤带面

This restaurant used to be located in Dachejia Alley but has now moved to outside the East Gate. It’s a modest little place, and while its location may be somewhat hidden, its popularity has not diminished.

Their biangbiang noodles are freshly made on-site, wide and long, served in a bowl of noodle soup. Just a few strands of noodles are enough to satisfy.

The eating style is similar to crossing-the-bridge noodles: you pick up the noodles and dip them into a special sauce bowl, ensuring the sauce coats the noodles completely. The taste is sour and spicy, with additional ingredients like tomatoes, mushrooms, and dried tofu.
