During the Northern and Southern Dynasties, a dish called “shāo yāzi” (Chinese: 烧鸭子) was created, which was similar to a roast duck. People in Nanjing have always had a love for duck dishes, including famous ones like duck blood soup with vermicelli and stewed salt-preserved duck. When the first emperor established the Ming Dynasty capital in Nanjing, numerous duck-based dishes were produced in the palace, with Peking duck being one of the main delicacies. Later on, the third emperor of the Ming Dynasty shifted the capital from Nanjing to Beijing, bringing the recipe for Peking Duck with him. Over time, the Peking duck underwent several improvements and was influenced by Shandong cuisine, giving birth to the Peking duck dish that we know today.

☀️The First Known Peking Duck Restaurant

During the Ming Dynasty under the reign of Yongle, the first-ever Peking duck restaurant emerged and was named Bianyifang, which was initially a small food workshop specializing in duck and chicken, located in Mizhi Hutong at Caishikou in Beijing. This method involves creating a small opening in the duck, removing the internal organs, filling the duck with water, and then sealing the opening. The duck is then slowly roasted over burning fruit wood, resulting in a crispy, thin skin with a unique fruity aroma. The open oven style generally causes the fat to melt during the cooking process, further enhancing the flavor and texture of the dish.

To put it simply, the open oven style and closed oven style differ in the final taste and texture of the cooked food. When using the open oven style, the food often has a crispy exterior but can be slightly dry on the inside. Conversely, the closed oven style results in food that is tender and juicy throughout.
